2008 York Mountain Cabernet Sauvignon

Our York Mountain Cabernet has always been one of our showcase wines, and the 2008 lives up to its predecessors. The wine is intensely dark and young tasting, even after 29 months in barrel. This barrel time, plus an additional 4 months of bottle age have given this wine an amazingly heavy aroma that reveals itself after some decanting time. The flavors of cocoa, earth, and dark fruits supply a extremely dense palate. The tannins present again suggest another vintage that will easily allow 12-15 of additional aging to supply complexity.

Tasting Notes
Cabernet Sauvignon is really adapted well for dry years such as 2008. They flower late, ripen slowly and withstand any early fall heat by retaining their natural acidity well into the picking season. Warm dry years also aid in keeping yields low. With a reduced crop everything the vine has to offer is packed into fewer berries resulting in stunning density.

Wine Story

Vineyard Notes
The 2008 Cabernet Sauvignon is a product of our Carver Vineyard in the York Mountain AVA. The extreme western location and elevation make this one of the cooler vineyards in the area. Yet being on the Central Coast, the late arriving wet season allows for safe extended hang time until the end of fall. This allows the vineyard to produce Cabernet of unmatched complexity.
Winemaker Notes
Harvested over three days at the end of October, this fruit was gently destemmed with no crushing. The whole berries were hand sorted into 2-ton open top stainless fermenters and cold soaked for 5 days. The free run juice was gently pumped over until a native fermentation was active. The pump overs were replaced by three a day punch downs and a full delestage every other day. After 25 days on the skins, a light pressing was blended with the free run and aged sur lees in 40% new French oak, 10% new American oak and 50% neutral French oak for 30 months.
