2021 Estate Chardonnay

Perhaps the greatest testament to our unique soils is our Estate grown Chardonnay. The warm, dry climate of Calcareous does not at first appear to be a suitable place to grow this Burgundian varietal. But the soil allows the grapes to maintain incredible acidity, the structural back bone of world class Chardonnay, and we can achieve perfectly ripened fruit that maintains clarity and purity.

Tasting Notes
Tropical mango and pineapple perfume emanates from this golden hued Chardonnay. Initially dominated by Kaffir lime and peach, richer flavors of hazelnut and subtle oak tannin create a complex profile in the mid palate and well into the finish. All these elements add up to make this perhaps our most versatile pairing wine working with brunch staples, seafood dishes and most recipes featuring pork, lamb or chicken.

Wine Story

Vineyard Notes
All of our three Chardonnay blocks are planted on slight South-Southeast facing slopes. This facing shades the delicate Chardonnay fruit from the warm afternoon sun of Paso Robles. This, along with our soils, allows for the production of remarkably bright fruit to be produced in what is generally too warm a location for Chardonnay. The 2021 vintage was unique for having a cooler than usual summer with temperatures never hitting the triple digits. This really benefited our Chardonnay, allowing it to fully ripen while maintaining perfect brightness and clarity of palate.
Production Notes
The grapes were pressed whole cluster and the fresh juice was allowed to cold settle for 24 hours. It was then racked to puncheons. Fermentation took place in barrels that were 10% new French puncheons which allows for the subtle introduction of oak, 50% was fermented in neutral French. The balance was fermented and aged in a concrete egg. Both lots were kept in the cool room which slowed the fermentation and stretched it out over 19 days. Once completed, the barrels were topped and the lees stirred weekly until the completion of malo-lactic fermentation in January. After 9 months aging the 2 lots were combined and prepared for bottling.
